The tea leaves are smoke-dried over pinewood fires, a traditional method that imparts a clean smoke profile. Working with tea curator Pekoe & Imp, Fossa grinds the whole tea leaves directly into the cacao during refining. This mechanical integration allows the volatile aromatic oils of the tea to bond cleanly with the cocoa butter. Flavor & Texture Distinct notes of pinewood smoke and dried longan.
